Caramel Espresso Ganache

In video games, hearts are your lives. Just about every video game has a concept of ‘health’ and ‘lives’. The original Legend of Zelda Link’s Awakening was the first time I saw heart containers used to represent lives in video games. Those pixelated heart containers are forever engrained in my mind and the reason I wanted to incorporate a heart into the company logo to represent that little bit of ‘life’ I hope my chocolates provide people. In the theme of hearts representing life, I went with an espresso caramel ganache for the filling- simple yet the perfect little boost to your day!

 

Directions


  1. Place cocoa butter and chocolate in a container

  2. In a small pot, combine heavy cream, espresso, sorbitol, glucose, butter, and vanilla paste and place on stove top with medium heat until combined.

  3. Once liquids are “just about to boil,” remove from stove top and pour over cocoa butter and chocolate.

  4. Let the hot liquid sit on the chocolate for 20-30 seconds to soften the contents before emulsifying with an immersion blender until silky smooth.

*In this recipe I use Valrhona’s Carmelia chocolate instead of actually making caramel ;) This was intentional as I wanted to complement the espresso and not compete with it. If you prefer a strong caramel flavor, I recommend making caramel and mixing it into the ganache.
